Banana Fritters

How many times do the bananas go brown quickly and the kids won’t eat them. Well, make them into banana fritters and the kids will love them.


Ingredients:


  • 2 mashed ripe bananas

  • 2 eggs

  • ¾ cup of self-raising flour

  • ¼ cup milk

  • 2 tbsp brown sugar

  • 1 tsp cinnamon

  • 3 tbsp butter


Method:


  1. Heat the butter in a pan. Mix all ingredients together. Place in spoonful portions into the pan. Cook until the bottom of the fritter turns brown. Turn over and brown the other side. 

  2. This mixture makes 8 good-sized fritters so if you are needing more just double the recipe. Make the whole batch as the mixture won’t last unless cooked.

  3. To reheat them the next day – pop them into the toaster or back into a pan with melted butter on a low heat.

  4. Serve with a garnishing of sliced banana, a drizzle of honey, lashings of cantily cream, and ice cream.


These freeze well if you wrap them individually.
