How many times do the bananas go brown quickly and the kids won’t eat them. Well, make them into banana fritters and the kids will love them.
Ingredients:
2 mashed ripe bananas
2 eggs
¾ cup of self-raising flour
¼ cup milk
2 tbsp brown sugar
1 tsp cinnamon
3 tbsp butter
Method:
Heat the butter in a pan. Mix all ingredients together. Place in spoonful portions into the pan. Cook until the bottom of the fritter turns brown. Turn over and brown the other side.
This mixture makes 8 good-sized fritters so if you are needing more just double the recipe. Make the whole batch as the mixture won’t last unless cooked.
To reheat them the next day – pop them into the toaster or back into a pan with melted butter on a low heat.
Serve with a garnishing of sliced banana, a drizzle of honey, lashings of cantily cream, and ice cream.
These freeze well if you wrap them individually.
