Fig and Apple Tart Recipe

This is a quick and easy dessert that only takes 15 minutes to prepare and 20 minutes to cook. You can easily adapt it to suit the seasons and whatever fruit you have on hand. Try swapping the apples for pears, or add mixed fruit and cherries for a festive touch at Christmas. If you aren’t a fan of marmalade, simply use apricot jam instead. Closer to Christmas, you could also substitute the figs with apricots or peaches. It’s a great way to use up soft fruit.
This Fig and Apple Tart keeps well in an airtight container in the pantry, but should not be refrigerated or frozen. It will soon become a family favourite – even the kids can make it with a little supervision!
Ingredients:
Puff pastry sheets
3 apples
4 fresh figs
½ cup sultanas
¾ cup cashews
1 jar light marmalade
1 tbsp honey
2 tbsp cinnamon sugar
Method:
Grease a baking tray.
Place the Puff pastry sheets in the bottom of the tray. Turn the edges over onto themselves to create a thin ridge.
Prick with a fork and bake for 10 minutes in the oven at 180°C.
Remove from the oven and press down any puffy patches. Slice both the apples and figs into thin wedges and layer them in alternate rows onto the warm pastry until they cover the whole surface.
Tip the marmalade out of the jar into a bowl, add the honey, and microwave on high for 2 minutes. Stir until it is all mixed together and runny.
Spoon the mixture over the sliced fruit.
Sprinkle the sultanas and cashews over the tray.
Sprinkle the tray with the cinnamon sugar.
Return the tray to the oven and continue to bake for 20 minutes or until golden brown.
Cut into slices and serve while still warm with a big dollop of chantilly cream.
