My Secrets to an Unforgettable Summer Salad

Summer is my absolute favourite time of year. It’s all about sunshine, fresh air, and food that is vibrant, healthy, and bursting with flavour.


So many people think a salad is just a boring side dish, but I’m here to show you how to make it the star of the show.


Here are my top secrets for creating a delicious, show-stopping summer salad every single time.


Secret 1: Fresh and Seasonal is Best


This is my number one rule. You can't beat the flavour of ingredients that are in season. They’re brighter, tastier, and often more affordable too.

My Summer Favourites:


  • Crisp cucumbers

  • Juicy tomatoes

  • Sweet red capsicums

  • Corn

  • Summer berries

  • Stone fruits like peaches or nectarines


The Golden Rule:


Simple is best. When you have amazing ingredients, you don't need to do much to them. Let their natural flavour shine!



Secret 2: Give It Punch with a Perfect Dressing


A great dressing brings everything together and gives your salad its personality. You can make them in advance to save time.

Here are two of my favourites:


  • For something bright and zesty, try my Signature Green Salad Dressing. It’s a real crowd-pleaser!


  • For a quick classic vinaigrette, this is my go-to recipe:

    Combine:

    • 3 parts olive oil

    • 1 part vinegar (white wine or apple cider)


    Add Flavour:

    • A teaspoon of Dijon mustard

    • A pinch of salt and pepper

    • A tiny bit of honey or maple syrup


    Shake It Up: Pop everything into a sealed jar and give it a good shake. Done!



Secret 3: Eat With Your Eyes First


We all know that presentation makes food taste better. Plating a salad is an art, but it’s an easy one to learn.

  • Match Your Main:

    • Citrus-based salads are beautiful with grilled fish

    • Creamy avocado and corn pair perfectly with chicken


My Final Pro-Tips for Salad Success


  • Plan Your Portions: One large handful of greens per person is a great rule for side salads.


  • Prep in Advance: Wash and chop your veg early and store them in the fridge. Mix your dressing ahead of time, too. When guests arrive, just assemble and serve!


  • Know Your Guests: Always check for allergies or dietary needs. It’s a simple step that makes everyone feel extra welcome.
